I saw this in Sky mall magazine, i thought Jonathan would want it for his meetings...ha
20 oz frozen spinach, thawed1/4 c butter
1 tsp minced garlic
2 tsp minced white onion
1/4 c flour
1 pt heavy cream
1/4 c chicken stock
1/2 tsp hot sauce (I didn't use any)
2 tsp lemon juice
1/2 tsp salt
2/3 c grated Parm cheese
1/4 c sour cream
1/2 c Monterey jack cheese
12 oz canned artichoke hearts, drained & chopped
Strain spinach and squeeze in paper towels. Mince spinach and set aside. Saute garlic and onion in butter over medium heat until golden (about 5 mins). Stir in flour and cook 1 min. Slowly whisk in cream and stock until boiling. Stir in lemon juice, hot sauce, salt and parm cheese. Stir until cheese has melted. Remove from heat and allow to cool for 5 mins. Stir in sour cream. Then fold in spinach and artichokes. Sprinkle with monterey jack. Microwave or heat in oven to melt cheese.

ReplyDeleteDeath is God's way of taking people away from evil. While we are shaking our heads in disbelief, they are lifting hands in worship. While we are mourning at the grave, they are marveling at heaven. While we are questioning God, they are praising God.
