What's for Dinner?

Are you getting sick of these posts?? 
As you can probably tell, i have a new obsession, and its cooking. No clue why but i really have enjoyed making all these new things. It is much healthier for the fam so it has been fun for us. I actually look forward to coming up with a weekly meal plan and going to the grocery store. I am sure it will fizzle at some point and i will be on to a new adventure but for now this is what was for dinner at our house this past week ;)

The Mahi we bought from Cotsco a while back and i forgot it was in the freezer. They are individually wrapped which makes it to easy to thaw and they were very good. We love Costco :)
Blackened recipe ( I did not use their Mango salsa recipe)
Avocado and Mango Salsa ( I did not use Jalapenos)
We had a bunch of the salsa left over so it was my afternoon snack with chips for a couple days
This recipe I got from my friend Cortney, they had us over for dinner and i loved it. I attempted to make it for my parents when we were living with them and it was way to lemony for some reason and didn't taste like Cortney's at all. I decided to attempt it again and this time I only used 1 lemon for the chicken marinate and 1 lemon for the pasta. So keep that in mind when your looking at the recipe. I would also like to give myself a pat on the back for grilling this chicken all by myself. I had never turned on a grill before, so while Jonathan sat in traffic on his way home for Little Rock he taught me Grilling 101 :)
I had several vegetables and things left over from this week and last week so i found this recipe on Pinterest and tweaked it with what i had in my fridge so i will just give you my recipe.
2 Chicken breasts (boil and shred)
Rice (I used a pack of Unlce Bens ready rice. Do you ever find things in your pantry and have no clue where they came from and aren't even sure if you even bought them, that was the situation with this rice but i was glad it was there :)
I used the rest of my corn and black beans from the slider recipe so approx 1/2 can of each
1/2 red and green bell peppers (chopped)
1/2 red onion (chopped)
Cheddar cheese
Mix all ingredients then top with more cheese and bake uncovered at 350 for 20 minutes.
The three of us ate the entire thing 
Ramsey and I love ranch dressing. She could dip everything in ranch and i could too. Its actually how i get her to eat most of her veggies :) I found a recipe on Pinterest and it tastes just like it and is much better for you. It called for 1% milk but we drink organic skim so i used that.

1 package of Hidden Valley Ranch seasoning mix
1 C plain greek yogurt
1 C Organic skim milk

Try it, it's pretty tasty!

  2. Looks good to me too! I will have to look for the Mahi at Costco. Cooking is a part of life so it is always nice to enjoy it!

  3. I tried the rice recipe- it was a hit with us too! The only thing I changed was I used Saffron rice instead. Yummy!
